Cauliflower Cheese with Bacon and Onion
First make a cheese sauce to do this you will need:
Pour over the top of the cauliflower and pop under the grill for 5 minutes until golden.
½ a medium cauliflower 1 onion (chopped) 1 clove garlic ¼ tsp cayenne pepper Salt and pepper 2 tbsp olive oil 1 pint of veg or chicken stock 4 tbsp peanut butter (crunchy or smooth but I prefer crunchy) ¼ pint milk
In a large pan, sauté the onions in oil until soft. Add the other veggies cook until tender. Add stock and peanut butter reduce the heat and simmer for 20 minutes. Finally add the milk cook for a further 5 minutes. Blend the whole lot and serve straight away.
Cauliflower Cheese with Bacon and Onion
Cauliflower, broken into florets 15g butter 1 onion, chopped 100g bacon, diced 15g marg 1 tbsp flour ¼ pint nilk ½ tsp dry mustard 100g mature Cheddar cheese
Cook the cauliflower florets in boiling water for 5 mins. Drain and place in an ovenproof dish Melt butter and fry the onion and bacon until crisp. Scatter over cauliflower Make a white sauce by melting marg in a small saucepan, stir in flour. Gradually add milk, stirring continuously until smooth. Mix in the mustard Pour over the cauliflower and scatter grated cheese over top Cook for 20 minutes, until browned (Gas 4, 180 C)
