Leek and Potato Soup
This is our favourite soup and we have been following this simple recipe for years!
Ingredients:
1 tablespoon of butter
1 onion
2 large leeks
2 cloves of garlic, crushed or sliced
500g potatoes, peeled and chopped
1 litre veg or chicken stock
1/2 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
salt and pepper
Method:
Wash the leeks well, then trim and slice them thinly.
Melt the butter in a large heavy bottomed pan over a medium heat.
Add sliced leeks and chopped onions and cook for 10 minutes, stirring occasionally.
Add crushed garlic and cook for another minute.
Add chopped potatoes, stock, thyme and season well. Bring to the boil, then simmer covered for 20 minutes or so until the potatoes are tender.
Puree the soup in the pot until smooth and creamy.
Taste and season.
Serve with fresh, crusty bread - delicious!
